Growing up I hated asparagus, it was always woody and stringy. Growing into adulthood I have a new love for asparagus and the stinky pee that comes along with it. Asparagus is a green vegetable and staple in my diet now. Although I am super picky when it comes to picking out asparagus bundles. They must be small in width and I always test the crisp factor. ( Snapping one in half to see how it snaps)
1 pound asparagus
1 teaspoon Dijon Vinaigrette
1 tablespoon extra virgin Olive Oil
1 1/2 teaspoon red wine vinegar
2 teaspoon parsley
In a medium bowl, whisk together mustard, vinegar and 1 tablespoon oil.
Add parsley and season with salt and pepper.
In a saucepan steam asparagus until tender about 2-3 minutes
Transfer to serving dish and Drizzle with Dijon Vinaigrette
Best serve at room temperature.
