One of my highly requested appetizers I make is these. The perfect salty, sweet, savory crunch. Easy to make ahead of time and refrigerate till ready to cook and serve. The first time I had a bacon wrapped water chesnut was at a Super Bowl party, it was heaven on earth. It is easy to eat a whole tray!
1 package 16 oz bacon
1 can whole water chestnuts ( if you cant find whole, buy 2 cans sliced water chestnuts and use 2 slices per wrap)
1 cup reduced sugar ketchup
1/2 cup light brown sugar
2 tablespoons light mayo
Couple shakes of Worchestershire Sauce
Line a baking sheet with parchment paper.
Preheat oven to 415°F.
While oven is preheating cut bacon in half, drain water chestnuts.
Take 1/2 slice of bacon and wrap a whole water chesnut in each, secure with toothpick. Reapeat till all water chesnuts are used up.
Bake in preheated oven for 20 minutes
While they are baking, mix together the last 4 ingredients.
Remove from oven and drizzle sauce mixture over each wrap.
Place back in oven and broil on high till crispy and carmelized.
Best enjoyed hot.
