What better topping to pulled pork than pickled onions!
1 red onion, thinly sliced
1 cup cider vinegar
1 teaspoon salt
1 teaspoon sugar
1 mason jar
Thinly slice red onions
In a sauce pan boil water. Once the water is boiled place onions in water for about 2-3 minutes.
Place drained onions in a jar
Pour in vinegar , salt and sugar together and mix till combined.
Pour over onions top with water.
Let chill for 1 hour or until ready to serve.
Serve over BBQ pulled pork or chicken.
After sitting in the vinegar mixture they turn a pretty pink color. Kind of looks like a science project in a jar!
