This salad is best served along with grilled chicken in the summertime. On a hot day when you don’t feel like cooking it also makes a great snack.
40 Cherry tomatoes ( any color works)
1 red onion, thinly sliced
1 cucumber, peeled and sliced
½ cup olive oil
¼ cup water
¼ to 1/3 cup balsamic vinegar
1 tsp garlic clove, crushed
1 tsp Dijon mustard
- In the jar mix olive oil, balsamic vinegar, garlic, Dijon mustard, salt and pepper.
- In a large container add the tomatoes, sliced red onion and sliced cucumber.
- Pour the dressing into the container, enough to cover the salad.
- Shake container to mix!
