White Corn Salsa

A favorite at Chipotle, a new addition to American Mexican cuisine, corn salsa. You can use white corn or yellow corn either work perfectly. Lately I have been using white corn, as I believe in the summer time its sweeter. Can be made with fresh corn ears or frozen corn.

Ingredients
1 bag frozen white corn
1 red onion, diced
1 Pablano pepper, diced
1 bunch of cilantro, minced
2 tablespoons lime juice ( fresh or bottled)
1 teaspoon salt ( less depending on flavor you like)

Directions
Dice the onion, pepper and add to a large bowl with lid.
Add in the frozen corn to the bowl
Mince cilantro and add into the bowl.
Lastly add in the lime juice and salt, stir to combine
Chill till ready to serve at least 8 hours.

Serve with tortilla chips and Salsa
