Easy week night meal.
1-14 oz package turkey kielbasa, sliced/quartered
1 green bell pepper, diced
1 sweet onion, diced
½ orange or red bell pepper, diced
3 small or 2 large russet potatoes, peeled/diced
Salt and Pepper
- In a heavy bottom skillet, heat olive oil and cook potatoes until golden brown ( about 10 minutes). Season with salt and pepper.
- In an additional skillet, brown the kielbasa . Remove.
- The cook onions and peppers until soft.
- Add all ingredients into same skillet and heat thoroughly
Top with a fried egg or by itself is good too.
