Balsamic Chicken Bake

Balsamic Chicken Bake

10 boneless skinless chicken thighs/breasts
20 medium asparagus, cut in half
3 red bell peppers, 1 inch chunks
1 cup baby carrots
2 red onions, 1 inch chunks
10 oz button mushrooms
½ cup + 2 tbsp balsamic vinegar
¼ cup olive oil
1 teaspoon sugar
3 tablespoons rosemary
2 garlic cloves, minced
2 tablespoons oregano/thyme
4 leaves fresh sage, chopped
2 baking sheet

Preheat oven 425°F

  • Wash and pat dry the chicken
  • Combine all ingredients, except chicken in a large bowl, toss to coat well.
  • Place all ingredients, except chicken on one baking sheet.
  • In the same bowl, toss chicken in remaining juices and place on second baking sheet
    Vegetables and chicken shouldn’t touch)
  • Bake 35-40 minutes until chicken is cooked and vegetables tender
