This is my mothers soup recipe, when one of her friends or a family member is sick or had surgery, she always whips up a batch and brings it over to them for dinner.
1 pound ground beef 90/10 or 93/7
½ cup onion, chopped
3 cups tomato juice
¼ teaspoon garlic salt
¼ teaspoon pepper
1 bay leaf
1 cup water
1 teaspoon sugar
2 cups raw carrots, shredded
1/8 tsp marjoram
2 cans ( 32oz) cream of celery soup ( or homemade cream of celery soup for dairy free)
- In a large soup pot brown the ground beef
- Add onion, tomato juice, garlic salt, pepper, bay leaf, water, sugar, carrots, marjoram.
- Bring to a simmer until carrots are tender.
- Once carrots are tender add the cream of celery soup
- Heat soup through
Serve with warm sliced french bread
