Thumbprint Cookies #2

1 Crisco Baking stick ( butter flavor)
½ cup light brown sugar
3 eggs, separated
2 tablespoon water
1 ½ teaspoon vanilla extract or almond extract
¼ teaspoon salt
2 cup flour
2 cups finely chopped pecans
1 jar sugar free preserves ( apricot, raspberry, strawberry, peach)


Preheat oven 350°F

  • Beat brown sugar and shortening in a bowl 2 minutes.
  • Add egg yolks, water, vanilla, salt and beat till combined
  • Add flour mix till dough forms
  • Roll tablespoon sized balls into pecans
  • Place onto baking sheet, press thumb into center
  • Bake 10 minutes then place 1 tsp preserves into each cookie
  • Bake additional 5 minutes
  • Cool on wax paper
