One of my favorite things about cupcakes and cakes is creating new frostings with alcohol in them. Baking with alcohol is science in the kitchen.
Whipped Rum Frosting
1 stick (½ cup) Earth Balance butter, softened
3-4 cups powdered sugar
2 tablespoons lactose free milk
1 teaspoon vanilla extract
3 tablespoons Calico Jack Whipped Rum
In an electric mixer combine all ingredients beat until smooth and creamy.
Makes about 2 cups frosting.
