Banana Nut Muffins

Growing up my brother and I would pick the nuts out of the banana but muffins, for whatever crazy reason. As an adult, I love banana nut muffins, nuts included!

Banana Nut Muffins

2 cups flour
1 ¼ cup walnuts, finely chopped
¾ cup sugar
¾ teaspoon baking soda
½ teaspoon salt
3 very ripe bananas, mashed
¼ cup So Delicious vanilla yogurt, Dairy Free
2 eggs
6 tablespoon Earth Balance butter, melted
1 teaspoon vanilla extract


Preheat oven 350°F

  • In a small mixing bowl combine dry ingredients
  • In a large mixing bowl mix together bananas, yogurt, eggs, vanilla until combined
  • Fold dry ingredients into wet
  • Fill 2/3 full
  • Bake 20-25 minutes until golden brown
  • Remove from pans and let cool

Can be in air tight container for 1 week, or stored in freezer and microwaved before eating.
