Apple Crispy Crunch Pie

One of my favorite memories while young, was standing on a step stool, with my little apron on, learning to bake a pie from my Grammy. Sadly, she isn’t with us anymore, I wish she could taste all my baking creations. But, my taste testers work just fine as well. One of them is even her son, my dad! Here is an apple crisp I made for camping a year ago. Freezes well and defrosts nicely.

Apple Crisp Crunch Pie

Ingredients
1 frozen pie crust
Crumb Topping
½ cup flour + 2 tablespoons flour
½ cup brown sugar
1/3 cup granulated sugar
1 teaspoon cinnamon
½ cup cold earth balance butter, diced

Filling
7 large granny smith apple, peeled sliced thin
1 tablespoon lemon juice
½ cup granulated sugar
3 tablespoons flour
1/8 teaspoon nutmeg
½ teaspoon cinnamon

Directions
Preheat oven 450°F
Topping
Mix all ingredients in a bowl, cut in the butter.
Filling
 Peel, core and slice apples 1/8 inch, coat apples in lemon juice and all other ingredients.
Place apples in pie crust, top with crumble

– Bake 15 minutes at 450°F then reduce oven to 350°F for 45 minutes.

Serving Suggestions

Serve with vanilla ice cream
