Minestrone Soup

Minestrone Soup

3 cups reduced sodium chicken broth
1 (28oz) can diced tomatoes
1 ( 15oz) can white beans, drained
2 carrots, peeled and chopped
1 celery stalk, chopped
1 cup onion, chopped
1 tsp dried thyme
½ tsp sage
2 bay leaves
2 cups cooked pasta
1 medium zucchini, sliced and quartered
2 cups coarsely chopped spinach or Swiss chard


  • In a slow cooker combine broth, tomatoes, beans, carrots, celery, bay leaves and seasoning.
  • Cover and cook on low 6-8 hours or high 3-4 hours
  • 30 minutes before serving add pasta, spinach zucchini
  • Remove bay leaves
  • Serve with basil, Parmesan cheese and a slice of warm bread.
