1 can (12 oz) re-fried beans
1 can black olives
1 can green chilies
1 pound ground beef
1 taco seasoning packet
1 bag corn chips
1 can diced tomatoes
2 cups cooked Spanish rice( *see note below)
1 jar favorite salsa
9×13 baking dish
Preheat oven 350°F
- In a skillet, cook ground beef until no pink remains, drain fat.
- Layer all ingredients into a casserole 9×13 pan
- Bake for 30 minutes until heated through ( if topped with cheese, cook till cheese is browned)
Serve warm, topped with lettuce, sour cream, avocado and salsa.
- For Spanish rice you can use box rice or make your own. My recipe for Spanish rice is as follows.
Jasmine rice, cook according to package
1/2 can tomato hot sauce
1 tablespoon tomato bullion
Chicken Broth ( I sub half the water for half chicken broth)
Cook rice according to package, add all other ingredients in before water starts to boil.
