Thumbprint Cookies 1

These remind me of the Pepperidge Farm cookies with the jelled fruit in the center, sadly those cookies are made with dairy. Here is a dairy free recipe for those who can’t have dairy!

Thumbprint Almond Cookies with Preserves

2 cups ( 4 sticks) Earth Balance butter, softened
2/3 cup granulated sugar
2/3 cup light brown sugar
1 teaspoon almond extract
¼ teaspoon salt
4 2/3 cup flour
1 ½ cup chopped almonds
¾ cup apricot preserves ( I use sugar free or low sugar preserves)

Preheat oven 350°F

  • In an electric mixer beat butter, sugars and almond extract until creamy in texture
  • Add salt, beat until mixed
  • Beat in the flour about 2 minutes
  • Scoop tablespoon size balls, and roll together
  • Roll into chopped almonds
  • Place onto baking sheets 2 inches apart
  • Press thumbprint into each cookie
  • Chill for 20 minutes
  • Once chilled bake for 15 minutes
  • Remove and let cool for 10 minutes
  • Place ½ teaspoon of apricot preserves into each cookie
  • Serve!
