Low Carb Peanut Butter Cookies

After being on a low carb, high fat diet for a while during my weight loss journey, I have fallen in love with these cookies. Great alternative to peanut butter cookies   A sweet craving. 
Ingredients

1 jar Skippys natural  peanut butter ( the one that says 1/3 less sugar and sodium ) 

2 cups Splenda sweetener 

2 eggs 

2 teaspoons vanilla 

Directions 

In an electric mixer add peanut butter, Splenda, eggs and vanilla. Beat on medium speed till combined. Should look sticky. 

Place in a bowl and refrigerate for 2 hours. 

Preheat oven 350 F 

Roll tablespoon size balls. Place on cookie sheet and press a fork into each cookie. 

Bake 10-12 minutes. 

Cool on wax paper.
