Magic Cookies

I hope have everyone’s day is going well!
Labor day is coming up here next weekend, and we are having a party. I thought I would whip up a batch of these magic cookies. My boyfriend on fourth of July wanted oatmeal, peanut butter, chocolate chip cookies. He thought that they would be tasty, moist and chewy! Boy, was he right! They disappeared right off the plate instantly! These cookies sure don’t last long, make sure to have one fresh out of the oven.

Peanut Butter Oatmeal Chocolate Chip Cookies

1/2 cup Earth Balance Butter, melted
1/3  cup Skippy’s natural peanut butter ( 1/3 less sugar and sodium)
1 large egg + 1 egg yolk
3/4 cup light brown sugar
1/2 cup granulated sugar
2 teaspoons vanilla extract
1 cup Quakers Slow Cooking Oats
1 1/4 cup all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2/3 Enjoy Life Semi Sweet Chocolate Chips

In a 2 cup measure cup, microwave  the Earth Balance butter and peanut butter till melted about 30 seconds.  Stir to combine.
In an electric mixer add the egg and yolk, sugars, vanilla whisk till combined.  When the butter mixture is cool whisk into sugar and eggs ( so you don’t cook the eggs). It is okay if the mixture looks granulated.
Add the oats and stir to combine. Add in the flour, baking soda, salt beat at a low speed to combine. Dough will look thicker than most cookie doughs.
Add in the Enjoy Life Chocolate Chips.
Set dough into a bowl and refrigerate for 2 hours until firm.

Preheat oven 350°F
Drop by rounded tablespoons onto a cookie sheet, press slightly down. Cook for 12 minutes or until edges look golden. If you want them chewier don’t cook as long. Allow cookies to cool 8 minutes before removing them from cookie sheet.
