Avocados? Yes! Chicken? Yes! Salad? Yes! High in fat, high protein, yummy, healthy!
Avocado Chicken Salad
3 ripe avocados, diced
6 thin sliced chicken breasts
3 tablespoons sliced green onion
1/4 cup red onion, diced
2 tablespoons lime juice
1/4 cup light mayonnaise
1/2 teaspoon cumin
1 teaspoon oregano
Couple shakes of season salt
In a heated oven to 350°F, place the 6 thin sliced chicken breasts with spices shaken over chicken to season in a 9×13 pan and cook for 25 minutes.
Once the chicken is cooked let cool for about 15 minutes, once cooled cube the chicken in to bite sized pieces and place in a large bowl.
Add to the bowl, 2 diced avocados, green onions and red onions to the bowl.
In a small bowl mash 1 avocado, mix with mayonnaise and lime juice.
Pour mayonnaise mixture into bowl of chicken, avocado, and onions.
Stir/ mix to combine, season to liking.
Enjoy this over a bed of shredded lettuce or by itself in a bowl.
