Happy Tuesday Everyone!
I am glad to be back on my blog and typing up new recipes for all y’all lovely, beautiful people. I have suffered G.A.D. and Panic Disorder for the past 7-8 years. Most days are great, some days are difficult to even get out of bed. The past two weeks, I have been dealing with a severe on set of panic attacks. Have not been motivated to type of recipes, but today has been a good day so far, guilty of laying on the couch but feeling better about myself. Life is a battle of bumps, u turns and up hill climbs. I got this, I will be okay! ( I keep repeating that to myself everyday.)
Enough about me…. These cookies are for whiskey lovers, chocolate lovers and anyone who likes a little booze in your desserts. Have yourself a shot while baking up some of these cookies!
Whiskey Chocolate Cookies
2-3 tablespoons whiskey ( I prefer to bake with Jack DanielsDaniels)
2 cups all purpose flour
3/4 cup dark chocolate baking cocoa ( I prefer the brand HERSHEYS)
1 teaspoon baking soda
1/2 teaspoon salt
1 cup ( 2 sticks) Earth Balance ButterBalance Butter, softened
2/3 cup granulated sugar
2/3 cup packed, light brown sugar
1 teaspoon vanilla
2 large eggs
1 cup Enjoy Life Mini Chips
In a small bowl combine the flour, cocoa, baking soda and salt.
In an electric mixer beat the softened Earth Balance Butter and sugars. Add in vanilla and whiskey.
Add eggs making sure to mix between each egg.
Gradually add in the dry ingredients, beating till dough forms.
Stir in Enjoy Life mini chips.
* Dough will be slightly wet, refrigerate for 2 hours until firmed.
Preheat oven 350°F
Drop by rounded balls onto a non stick cookies sheet.
Bake 10 minutes or until edges are set. ( bake longer for crispier cookies)
Cool on wax paper.
* Refrigeration isn’t needed but cookies will spread.
