Cinnamon Cookies

Hello Loves! I am going to try and post at least 3 days a week or every other day! Today was a cleaning the house type of day. I haven’t been very productive lately. So, today, I cleaned my room, updated my Surface Pro, and baked cookies.

I’m not sure what to call these cookies, my mom suggested Naked Chocolate Chip Cookies, but there is no chocolate chips in them. Weird, I know! I was thinking Cinnamon Cookies, sweet, simple and delicious!


Cinnamon Cookies
Ingredients
2   1/4 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 sticks Earth Balance Butter, softened
2/3 cup granulated sugar
1 cup light brown sugar, packed
1 teaspoon vanilla extract
2 eggs
1 tablespoon cinnamon

Directions
In a small bowl stir together flour, baking soda, cinnamon and salt.
In a electric mixer beat Earth Balance butter, granulated sugar, brown sugar until creamy.
Add vanilla extract and combine.
Add eggs; beat well.
Gradually add in the dry ingredients little at a time. Beat till all combined, scrapping sides if necessary.
Refrigerate dough overnight.
Preheat oven 375°F
Drop by rounded tablespoons onto ungreased cookie sheet.
Bake for 12 minutes or until edges are golden brown.
Cool on wax paper, store in air tight container for 1 week.

I made the dough last weekend, froze it for a week, took it out the night before, let defrost in fridge till ready to use. Super easy to make ahead and keep in fridge for 1 week, until ready to use. Can also pre roll into tablespoons, keep in freezer, pop out when ready to use.
