What is a shepherds pie? Well back in the old days they used to call them cottage pies or meat pies. Shepherds pie is usually made with minced lamb, but new age most people refer shepherds pie to beef or lamb. Shepherds usually herd mutton( lamb& sheep), which is usually used as the main ingredient in a Shepherds pie. To me cottage pie sounds boring and unappetizing, thus calling it Shepherds Pie.
Mini Shepherds Pie
4 Large Russet potatoes, scrubbed clean
1/2 cup low fat lactose free milk
1/2 teaspoon salt
2 tablespoons Earth Balance Butter
1/4 teaspoon garlic salt
1 tablespoon extra virgin olive oil
1 pound ground beef ( 93/7%)
1/2 sweet or yellow onion, diced
2 garlic cloves, minced
2 tablespoons all purpose flour
1 cup beef broth
2 teaspoons Worcestershire Sauce
1/2-1 teaspoon salt
3/4 teaspoon white pepper
1/2 teaspoon garlic salt
1 1/2 cups frozen peas and carrots
Preheat oven to 425°F
Scrub clean the potatoes & bake them for 50-60 minutes until done.
Cut the tops off the potatoes, and scoop out most insides leaving a thin wall of potato around the edges. ( should be sturdy enough to stand up alone.
Reduce oven temperature to 350°F
In a small bowl, mash the potatoes scooping’s with Lactose Free Milk, Earth Balance butter and seasonings. ( should not be to thin in consistency)
In a large skillet, heat the olive oil, add the onions and garlic cook till translucent.
Add in ground beef, breaking up and cooking till done. When beef is done, sprinkle with salt seasonings and flour. Stir to combine.
Add in beef broth and Worcestershire sauce, with frozen peas and carrots. Cook till sauce thickens and becomes shiny/glossy.
Scoop meat mixture into each potato leaving room at the top. Press firmly into the skins.
Add two scoops of mash on top of filling. Sprinkle with paprika.
Bake for 20 minutes until the potatoes start to turn golden brown.
Serve warm on a plate.
P.S. There will be leftover meat and potatoes, add them into a bowl and save for another meal.
