S’mores Cookies

What is the best part of having a campfire? Having stories to tell? Having campfire games to play? Or how about the desserts, you can make over the campfire? S’mores that is.
I tried making these last weekend and it turned into cookie pancakes. I tried again much more successful this time around. The good thing about baking is trial and error. Trying things if it doesn’t work, try it again a different way. They might not be the prettiest cookies but they taste excellent, and they get jumbled up in your stomach anyways. Who cares, right?

S’mores Cookies

Ingredients
2 sticks Earth Balance Butter , softened
1 cup light brown sugar
1 cup granulated sugar
2 eggs
2 teaspoons vanilla
2 tablespoons brandy
2 1/2 cup flour
3 teaspoons corn starch
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 tablespoon cinnamon
1 cup dark chocolate chips
1 package mini marshmallows

Directions
In an electric mixer beat the softened Earth Balance butter, and both types of sugar.
Add in the eggs, vanilla and brandy, mix well.
Mix in the cinnamon, salt, baking powder/soda, and corn starch.
Beat in the flour mixing well between 1/2 cups.
Stir in the chocolate chips.
Place dough in a pie tin wrapped in plastic wrap, and stick in the refrigerator for 4 hours, till chilled.
Preheat oven 375°F
Place rounded tablespoon sized balls of dough on cookie sheets, press down slightly.
Bake 6 minutes, remove from oven ( yes the cookies will be partly raw).
Press 3 to 4 mini marshmallows into the top of the cookies.
Place back in oven and bake for additional 3-4 minutes.
Remove cookies, let cool for 2 minutes before removing from cookie sheets.

Enjoy them any time of the year, inside or outside. No campfire required.
