In a past post I have made cauliflower mash, today I tried it with a purple cauliflower. I was intrigued by the color purple, so vibrant for a vegetable. I learned purple cauliflower comes from an antioxidant, just as red wine and red cabbage. I was very surprised to cut open the cauliflower and it was white inside too! One would assume it was dyed purple, but nope! The flavor was alike to any plain old white cauliflower.
Purple Cauliflower Mash
1 head purple cauliflower, washed and trimmed
1 heaping scoop of Green Valley Organics, lactose free cream cheese
1 teaspoon kosher salt
1 tablespoon garlic, minced
1 sprinkle of chopped chives
In a steamer basket, steam the cauliflower till tender with a fork!
Place all ingredients in a food processer.
Blend till creamy in texture, like mashed potatoes.
Super simple right?
