Coconut Curry Chicken

One week till Halloween! This past weekend,  we had people over for a viewing party of The Rocky Horror Picture Show remake, and we served dinner. For dinner I prepared curry! This time it came out perfectly! My boyfriend Seamus and I tried to make it before but it was missing something. This recipe is super easy to make, takes a couple hours in the crock pot and can be served amongst a crowd. For someone who doesn’t eat much of a variety of different cultured foods, this was divine.

Coconut Curry Chicken
Ingredients
6 chicken breasts, cut into 1 inch chunks
4 packets of Yellow Curry Paste, I used the brand Aroy-D ( can be found at 99 Ranch Market)
2 boxes of 100% Coconut Cream each box was 33.5 ounces, I used the brand Aroy-D ( also found at 99 Ranch Market)
1/4 cup Skippy’s Natural Peanut Butter, melted ( I used the one with 1/3 less sugar and sodium)

Directions
Plug in crock pot, turn on high.
Place coconut cream and yellow curry paste into the bowl of the crock pot.
Whisk to combine the curry paste with cream, once combined add in peanut butter whisk again.
Once it is all combined, should be yellow in color, add in the chicken breast pieces.
Stir to combine and cook on high 4-6 hours and low 6-8 hours.

Serve over jasmine rice or cauliflower.
