Mushroom Chicken

My favorite dish at Panda Express is Mushroom Chicken. One night for dinner my mom wanted me to try and make mushroom chicken. Here was the results.

Mushroom Chicken

1 pound chicken breasts, 1 inch squares
Cornstarch for dusting
1 tablespoon oil
1 tablespoon sesame oil
2 tablespoon soy sauce
1 tablespoon balsamic vinegar
1 teaspoon ground ginger
2 garlic cloves, minced
20 ounces whole button mushrooms
4 medium zucchinis, sliced and halved


  • Cut chicken into bite sized 1 inch pieces, lightly dust with corn starch
  • Halve and slice the zucchini and mushrooms
  • In a wok or skillet heat both oils and fry chicken until no pink remains and golden brown
  • Remove and dry on paper towels
  • Add zucchini and mushrooms to wok, stir fry for few minutes
  • Add soy sauce, vinegar, garlic, ginger
  • Fry until zucchini is cooked
  • Return chicken to pan and coat with sauce

Serving Suggestions

Serve over rice!
