Garlic Roast Beef

Garlic Roast Beef
serves 4

1.25 pounds beef roast
4-5 garlic cloves, sliced
1 tablespoon olive oil
3 sprigs fresh oregano

Preheat oven to 325°F
With a small pairing  make small slits into the roast and stuff with garlic slices.
After stuffing the roast with garlic, rub with olive oil. Season with salt and pepper.
Place roast in a roasting pan or in a 13×9 baking dish with a wire rack. Top with fresh minced oregano.
Bake for 45 minutes until a thermometer inserted reads 135°F for about a medium cook.
Let rest for 20 minutes, and slice to serve.

Serve with Purple Cauliflower Mash.
