Turkey Bacon, Four Ways
Hey Delectable Delightful Readers!
My name is PJ, and I’m excited to share one of my creative combinations with you on Pam’s Blog! I’ve been friends with Pam since kindergarten and have been so impressed with her fitness journey so far. She has been so dedicated in making major lifestyle changes after her medical scare, almost a year ago. All fitness journeys’ come with their fair share of ups and downs, and after embarking on my own fitness journey in 2014, it’s been wonderful to see Pam’s determination, see her progress, learn her accomplishments in the gym and taste her delicious, nutritious recipes. (have you had her curry or Thai chicken? Both are BOMB….you should make both ASAP)
If anyone knows me, knows that I’m not bacon’s #1 fan, sure I’ll have a slice on occasion with breakfast or on a burger, but typically its just too salty for me. My bacon free life changed though, when I found the uncured turkey bacon from Trader Joes. It’s not only minimally processed, and low in sodium, but has a unique savory taste that’s wonderful for breakfast, lunch or dinner. So, without further adieu here are few easy ways to use it, and a super simple recipe for a Cobb Salad.
3 cups of your favorite mixed greens (spring mix, arugula, kale, spinach)
1 Hard Boiled Egg
1 slice Turkey Bacon
2 oz Leftover Roast Chicken (mine was seasoned with TJ’s Herb de Provence..so good!)
1 Mini Persian Cucumber
¼ Chopped Cherry Tomatoes
¼ Roasted Red Pepper, sliced
Maple Dijon Balsamic Dressing
1 Tbs Dijon Mustard
1 Tbs Balsamic Vinegar
1 tsp Pure Grade Maple Syrup
½ Tbs Apple Cider Vinegar
Arrange ingredients together on top of your greens, drizzle dressing and top with Avocado! This would also be great with your choice of roasted vegetables, toasted pecans, pumpkin seeds and a sprinkle of goat cheese. Enjoy!
