Asparagus Chicken 

Happy Friday!!! Around the holidays always is pretty busy, I have created and crafted new recipes but been so busy and semi lazy to type them up. Today I have for you beautiful people is chicken rolled up stuffed with asparagus and cream cheese, topped with sea salt and spicy pepper. I made this last Friday for dinner with anything we had in our fridge. Not knowing how it would turn out, it was a hit. My family, boyfriend and I all enjoyed it. I even topped it with a cheese gravy. You’re probably wondering how someone that is lactose intolerant can have cheese? I’ve been creating a lot of recipes with this lactose free cream cheese, I but at my Safeway store. The brand is Green Valley Organics, the sell it at Whole Foods and other stores too. 

Asparagus Chicken 

Ingredients 

1 package thin sliced chicken breast, pounded out thin 

1 bunch asparagus, trimmed and washed 

1/2 cup green valley lactose free cream cheese 

Oregano/Basil/garlic powder

Sea Salt

Spicy Pepper

Directions 

Preheat oven 350 F

In a 9x 13 baking dish, spray with non stick cooking oil. 

On a piece of wax paper, place the pounded out chicken breast, spread with a tablespoon of cream cheese, add on top 6 asparagus. Sprinkle with garlic powered and oregano/Basil. Begin rolling the chicken and place seam side down. Repeat. 

Sprinkle chicken with sea salt and pepper. Bake for 30 minutes or until chicken is cooked through. 
Serve with favorite sauce.
