Vegetable Chicken Soup

Man has today been busy or what?

 This morning started off with saying bye to my mom, as she went into surgery. I, then went to the gym, came home showered, put the soup together, went to my doctors appointment. My doctors appointment today was for removing stitches and taking my hopefully last cyst out. Ouch! It didn’t hurt during the process, it hurts a ‘hole’ lot now. ( joke is I have a hole in my head :[ ) After my appointment , went to the surgery center and waited for my mom to come out. In good news, her surgery went great! Bone spur is gone! Recovery time starts now! Lots of new recipes hopefully coming in the next weeks! Anyways, here is the recipe from tonight’s soup! 
Vegetable Chicken Soup

Ingredients 

4 chicken breasts

1 white onion, diced 

1 yellow squash, sliced and quartered 

1 green bell pepper, cut into 1 inch slices 

3-4 carrots, sliced 

2 celery stalks, sliced 

1/2 can white beans, drained 

1 can diced tomatoes, drained 

1 Bunch Swiss chard, sliced ( save for last 30 minutes ) 

1 1/2 teaspoon kosher salt 

2 teaspoons marjoram 

2 teaspoons Basil leaves 

2 teaspoons oregano leaves 

1 teaspoon thyme 

1/2 teaspoon white pepper

1/4 teaspoon sage

1/4 teaspoon chili powder 

1 box- 48 ounces Reduced sodium chicken broth 

Directions 

Spray a crock pot with non stick spray. Add in chicken breasts, so they are laying flat on the bottom of the crock pot, add in all diced veggies, except for Swiss chard. Add in spices, and chicken broth. Mix the top of the crock pot so spices combine. Cook for high for 6-8 hours. Once done, remove chicken, shred. Add in Swiss chard and put the shredded chicken back in. Adding the chicken on top of the chard, will keep the chard submerged while it softens and cooks. After 30 minutes, serve in a bowl! Enjoy dipping warm bread into the soup, or top with favorite cheeses!
