Happy Friday!! One more day till Christmas Eve! I am finally all done with my Christmas shopping. Today I am baking my desserts/ breads for Christmas dinner. Apple crisp crunch pie, lemon squares, gluten free lactose free blueberry muffins, and a crab dip for an appetizer. I will eventually be posting all recipes for those dishes. Tuesday my mom had surgery, I’ve been busy helping her and making sure she is on the mend. She has been begging for a stir fry dish, whether it’s broccoli beef cashew chicken or mushroom chicken. But, me only trying to eat beef once per week, it resulted in creating a broccoli chicken! Filled her desire for stir fry and my need for chicken. I was worried this dish was going to be high in sodium, but only about 400mg per serving which isn’t too bad. I hope you all enjoy this recipe!
Broccoli Chicken Stir Fry
3 heads broccoli, broken into florets
4 chicken breasts, cut into 1 inch pieces
1/2 white onion, diced
2/3 cup GF reduced sodium soy sauce
1/3 cup rice vinegar
1/4 cup water ^
1/2 cup reduced sodium chicken broth
3 tablespoons baking Splenda
1 tablespoon sesame oil
1/4 teaspoon ground white pepper
1 tablespoon vegetable oil
1 tablespoon minced ginger
1 tablespoon minced garlic
2 tablespoons corn starch
1/4 cup water
In a small bottle shake together 1/4 cup water and 2 tablespoons corn starch. Set aside.
Steam broccoli florets until fork tender.
In a wok or nonstick skillet, add the diced onion and chicken breasts, cook till done.
While the chicken is cooking, In a small sauce pan add vegetable oil, garlic and ginger cooking till fragrant about 10-15 seconds. Add in soy sauce, chicken broth, rice vinegar, Splenda, white pepper, soy sauce and sesame oil. Whisk till combined. Heat thoroughly till boiling, reduced heat to medium and add in corn starch water mixture. Cook till thickened. Add broccoli and *1/2 the sauce into chicken & onion mixture. Heat through, and serve over rice.
* You may not want to add in all 2 cups of sauce into stir fry. Save some for drizzling over the meat after playing.
