Creamy Tomato Soup 

Happy Hump Day y’all ! Man I’ve been busy the past week. Here is a recipe from last week, tomato soup, my dad and I had it for dinner one night. Served it with quesadillas to dip into the soup. Reminds me of my childhood! 
Creamy Tomato Soup 

Ingredients 

2 tablespoons olive oil 1 onion, chopped 

1 tablespoon tomato paste 

2 clove garlic, minced 

2 tablespoons corn starch

1 28-oz. can crushed tomatoes( no salt added), with juice 

1 1/2 cups low-sodium chicken broth 

1/2 cup Arroy-Dcoconut cream 

8 ounces Green Valley cream cheese, lactose free

1 teaspoon garlic powder 

1 teaspoon basil leaves 

1/2 teaspoon white pepper 

1 teaspoon salt

Directions 

Sauté onions in oil till translucent. Add in garlic, add in tomato paste. Add in crushed tomatoes, and 1 cup chicken broth. Stir, bring to a boil and lower to simmer. Add in 1/2 cup chicken broth, mixed with corn starch. Still till thickened. With a hand blender blend soup until smooth. Add in spices and cream cheese, coconut cream. Simmer till heated through. 

Served with low carb tortillas with dairy free cheddar cheese. Can also be served along some warm baguettes.
