Happy Tuesday! 

This is my all time favorite type of cookie. I had one of my assistant managers at work request it and got me thinking it’s about time for a new recipe! Old recipe but new for the blog! Hope you all enjoy this as much as I do!  It’s the perfect mix of sweet sugar and spicy cinnamon. 

Snickerdoodle Cookies. 


1 1/2 cups sugar

1 cup Crisco Butter shortening or 1 cup Earth balance butter  

2 large eggs

2 tablespoons unsweetened coconut milk

2 teaspoons vanilla extract

2 3/4 cups all Purpose Flour

2 teaspoons cream of tartar

1 teaspoon baking soda

3/4 teaspoon salt

Cinnamon Sugar Mixture 

1/4 cup granulated sugar 

1 tablespoon ground cinnamon

Heat oven to 400°F. In an electric mixer combine 1 cup butter flavored crisco( or earth balance butter) , 1 1/2 cup granulated sugar, unsweetened coconut milk and vanilla. Beat till mixed, add in eggs continue beating at medium speed until well combined. Add in cream of tartar, salt, baking soda and then flour, mix on low speed until smooth and combined. Mix in 1/4 teaspoon cinnamon. Roll dough into 1 inch sized balls and then roll into cinnamon sugar mixture. ( if using earth balance butter, refrigerate dough for 2 hours). Place on cookie sheet and bake for 8 minutes on second rack in oven. ( bake one cookie sheet at a time )

Remove from oven and cool on cookie sheet. 
Makes about 32 cookies.
