Apple Crisp Bars

Hello and happy Thursday. Hoping everyone is having a beautiful day so far. Man I have been swamped with work and maintaining my healthy lifestyle. I have been making tons of new foods, but haven’t had time to type them up for y’all.

Last week it was my coworkers birthday and she wanted something with fruit. I was thinking a pie, but our staff is large and a pie won’t feed enough. I opted for combining my Apple crisp pie and making them into a bar form.
Apple crisp bars

Serving 13×9 pan

1 stick crisco butter flavor shortening

2/3 powdered sugar

2 cups all purpose flour
5-5 granny smith apple, peeled sliced thin
1 tablespoon lemon juice
½ cup granulated sugar
3 tablespoons flour
1/8 teaspoon nutmeg
½ teaspoon cinnamon
Crumb Topping
1 cup flour + 4 tablespoons flour
1 cup brown sugar
2/3 cup granulated sugar
1 1/2 teaspoon cinnamon
1 cup cold earth balance butter, diced

Preheat oven to 350• F

Grease a 9×13 glass pan.
In a small bowl combine the crust ingredients until a crumble mixture forms. Press tightly into bottom of pan. Once pressed into pan bake crust for 10-15 minutes( it won’t look browned).
While the crust is baking, peel and 1/8″ slice the apples. Per 1/8 of an apple I got 4 slices. Toss the filling ingredients into a large bowl, mix to coat the apples.
In another bowl combine the crumb topping.

If it looks chunky or crumbly looking, that’s the point.
Layer the apple filling mixture evenly throughout the pan. Then sprinkle the crumb topping evenly over that.
Bake in oven for 30 minutes. Increase temperature to 400 • and bake any additional minutes needed until the top gets crunchy.
Let cool completely before slicing. Store in the refrigerator until an hour before serving.
Hope you enjoy these.
