Maple Cupcakes

Maple cupcakes without frosting. The frosting will come tomorrow. I started baking these for work tomorrow. These basically taste like pancakes but I’m cupcake form.

INGREDIENTS

2 cups granulated sugar

3 large eggs

½ cup heart smart vegetable oil

1 tablespoon imitation maple extract

3/4 cup lactose free sour cream

2 ½ cups all-purpose flour

3 teaspoons baking powder

3/4 teaspoon salt

1 ¼ cups lactose free milk ( I used whole)

INSTRUCTIONS

– Preheat the oven to 350°F. Line a cupcake pan with cupcake liners.

– In a mixer, combine the sugar, vegetable oil, eggs and maple extract. Mix till fully combined.

– once mixed dump in the sour cream and beat until well combined.

– In a large bowl combine flour, baking soda & salt. Now alternating between milk and flour beating well between adding each.

– Use a spatula to scrape down the sides of the bowl to make sure it’s all mixed without clumps.

– Using a 1/3 measure cup scoop the batter filling each liner 2/3 full.

– Bake for 14-16 minutes.

Cool completely
