Wedding cookies- Snicker-doodles, lemon and cookie/ cream

The crazy part of this all is that, I started this food/recipe blog after my strokes, to become healthy. ( then my brother got married , 6 years ago) NOW ITS MY TURN. I get married Saturday, March 26!!!

Yes, I’m crazy! I made 30 dozen of these cookies below- to serve at my wedding. Please enjoy

Snickerdoodle cookies

INGREDIENTS

• 1 3/4 C. sugar

• 1 C. Crisco® Butter Flavor Shortening

• 2 large eggs

• 2 Tbsp. Choice of bourbon/whiskey

• 2 tsps. Pure Vanilla Extract

• 2 3/4 C. all-purpose flour

• 2 tsp. Cream of Tartar

• 1 tsp. Baking Soda

• 1/2 tsp. salt

• 2-3 Tbsp Ground Cinnamon

DIRECTIONS

1. HEAT oven to 400°F.

2. COMBINE 1 1⁄2 C. sugar, butter flavor shortening, eggs, bourbon and vanilla in large bowl. Beat with electric mixer until well blended.

3. COMBINE flour, cream of tartar, baking soda and salt in medium bowl. Add gradually to shortening mixture at low speed. Mix just until blended. Add in 1-2 TBSP ground cinnamon , until dough has some brown speckles in it.

4. COMBINE remaining 1⁄4 C. sugar and 1TBSP cinnamon in small bowl. Shape dough into 1-inch balls. Roll in cinnamon-sugar mixture. Place 2 inches apart on ungreased baking sheets.

5. BAKE 7 to 8 minute or till ONCE EDGES start to brown remove from cookie sheet and cool on rack or wax paper lined table. .

Cookies n cream

Ingredients:

• 1 cup Crisco® butter flavor , room temperature

• 3/4 cup granulated sugar

• 3/4 cup light brown sugar

• 1 pkg (4.2 oz) Oreo pudding/pie filling mix

• 1 Tbsp vanilla

• 2 eggs

• 2 Tbspoon your choice of milk ( lactose free, cashew, soy , oat )

• 1 tsp baking soda

• 1/2 tsp salt

• 2 1/4 cup all purpose flour

• 14 coarsely chopped double stuffed Oreo cookies.

Instructions

1. Preheat oven to 350°.

2. In a stand mixer add crisco flavor butter and both sugars on medium speed until blended. Add in the dry pudding mix and mix for an additional 30 seconds, scraping the sides of the bowl as necessary. Add in eggs and vanilla and milk and mix until combined. Turn mixer to low and slowly add in baking soda, salt and flour until combined

3. Stir in coarse Oreos ( I prefer double stuff) .

4. Using a spoon scoop 1 inch balls and drop the dough onto baking sheet and bake for 6-10 minutes. Once cookies set and edges start to turn golden brown Remove from cookie sheet to cool.

Lemon Dazzle cookies

INGREDIENTS

• 1 C. Crisco® Butter flavor Shortening

• 1 1/2 C. sugar

• 2 eggs

• 2 tsp -+ Pure lemon Extract

• 2 1/2 C. all-purpose flour

• 1 tsp. Baking Soda

• 1/2 tsp. salt

• Lemon zest of 1 lemon

• Squirt of fresh lemon juice

DIRECTIONS

1. HEAT oven to 375°F

2. BEAT shortening and sugar in large bowl with mixer on high speed till blended . Add eggs and vanilla, shirt of lemon juice, lemon zest. Beat until smooth.

3. BEAT in flour, baking soda and salt until combined. Drop by rounded 1 inch balls on cookie sheets ..

4. BAKE 6 to 11 minutes or until lightly browned.

5. Remove and cool

Any cookie Dough put in fridge while others are baking.

Adjust times as necessary, ALL OVENS ARE DIFFERENT

I Never let my cookies cool on cookie sheets

Cookies can be stored in Air tight container for 5 days.
