Who doesn’t love a good soup in cold weather?
Turkey Vegetable Soup
Ingredients
3 zucchini, sliced and quartered
1 green bell pepper, sliced and diced
1 red bell pepper, sliced and diced
½ sweet onion, diced
1 (48oz) chicken broth low sodium
1 can white beans, low sodium
1 can black beans, low sodium
8 oz button mushrooms, quartered
1 can southwestern corn
1 small can diced green chilies
1 huge can diced tomatoes
2 tablespoon chili powder
1 tablespoon paprika
1 teaspoon cumin
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon white pepper
1 package Jennie-O ground turkey 99% fat free
(Optional, sliced S
wiss chard, add at the beginning)
Directions
- In a large soup pan, cook ground turkey until cooked through.
- Add all other ingredients
- Heat to a boil and reduce to low
- Simmer for 1 hour till veggies are cooked and soft
Serving Suggestions
Serve warm with side of sliced bread
